It's made by slowly kettle cooking unrefined cane sugar, high in molasses content and full of flavor, until it is dark and aromatic. Bringing the sugar past its caramelization stages gives this cocktail syrup tart and bittersweet notes of sour cherry, caramel brittle, and toast. Tippleman's Burnt Sugar Syrup is at its best when mixed with age spirits.
