Viejo Indecente's Ensamble Mezal is their Espandin Mezcal blended with Madre Cuishe agave. Their agave is naturally harvested, and their spirits are artisanal and handmade. It smells like herbal astringent but it tastes green, like grass and asparagus. Both the Ensamble and the Espandin Mezcales are simultaneously cooked in a handcrafted steam oven, then fermented in tanks made from Montezuma wood. They are finished with a double distillation in copper alembics.
